Jalapeños, which are typically known for their medium-level heat, come in at 2500-4500 Scoville units. Originally from Mexico, they average 3½ inches in length and require a minimum of 80 days until they are ready to be picked. Starting out light green, they will eventually transition to deep green and, ultimately, to a vibrant red hue. Peppers that are collected when they are red are often sweeter than those taken earlier.
